Chicken Katsu Recipe

Ingredients
Chicken Katsu
- Chicken breast
- Egg
- Panko
- Flour
- Salt
- Light miso (optional)
Tonkatsu Sauce
- 3 tsp (42 g) Ketchup
- 1 tsp (14 g) Worcestershire sauce
- 1 tsp (14 g) Oyster sauce
- 1 tsp (14 g) Light miso (optional)
- 1 tsp (14 g) Honey
Spicy Cabbage Slaw
- Cabbage
- Salt
- Green onion
- Crispy chili garlic or Chili oil
- Lemon juice
Sandwich
- Bread
- Mayonnaise
Method
The methods is split into three parts, the chicken katsu, the tonkatsu sauce, the cabbage slaw and the sandwich that combines all three.
Chicken Katsu
- Prepare the chicken
- Make the chicken flat by pounding it with a meat mallot or something you can hit it with :)
- Salt the chicken.
- Rub it with light miso (optional).
Breading Station
- One bowl with all-purpose flour.
- One bowl with beated egg and a little bit of water.
- One bowl with panko.
These can be kept in the fridge for 3 days covered.
Bread the chicken
Bread the chicken using the order in the previous step.
Fry the chicken
- 470 mL frying oil.
- Heat the oil up to 160 ℃ to 175 ℃.
- Lay the breaded chicken in the oil away from you.
- Fry to 3 to 5 minutes or until crispy golden brown. If it is burning too quickly, turn the heat down.
- Flip it over and then fry it additional 3 to 5 minutes or until internal temperature of 70 to 75 ℃ is reached.
- Place the done chicken on wire rack over the baking sheet and let it cool.
- Repeat with all the rest of your chickens.
Tonkatsu Sauce
Mix these ingredients together.
- 3 tsp (42 g) Ketchup
- 1 tsp (14 g) Worcestershire sauce
- 1 tsp (14 g) Oyster sauce
- 1 tsp (14 g) Light miso (optional)
- 1 tsp (14 g) Honey
Spicy Cabbage Slaw
- Thinly slice the cabbage and put in a bowl.
- Add salt.
- Bruise and squeeze it.
- Add thinly sliced green onions.
- Add crispy chili garlic or chili oil.
- Add lemon juice.
- Mix it up and taste it and add salt if needed.
Tonkatsu Chicken Sandwich
- Cut the chicken katsu so that it fits the bread.
- Add the cabbage slaw.
- Cut the chicken katsu so that it fits the bread and add it to the bread.
- Add the tonkatsu sauce.
- Add some Mayonnaise.
